Dinner Day 3: Caramalised Onion & Rocket Pizza

Pizza, but not as you know it. Cashew nut cheese and tomato sauce on a crispy sprouted buckwheat base, topped with refined-sugar free ‘caramelised’ onion
Ingredients:  Cheezy Sauce
  • ½ Cup Cashews (pre-soaked for 1 hour)
  • ¼ Cup Water
  • 1 tbsp Nutritional Yeast
  • Juice from ½ Lemon
  • 1 Peeled Garlic Clove
  • Pinch Himalayan Salt
Tomato Sauce
  • 5 Fresh Basil Leaves
  • ½ Cup Sundried Tomatoes
  • 1 tsp Lemon Juice
  • 1 Date (pre-soaked)
Caramelised Onion Method
  1. 1. To make the caramelised onion, mix all ingredients excluding the onion then marinate the onion in the mix. Place in a dehydrator or oven on the lowest temperature for a few hours until golden brown

  3. 2. To make the tomato sauce, blend all ingredients until smooth
  4.  
  5. 3. To make the cheese sauce, blend all ingredients until smooth
  6.  
  7. 4. Spread the broccoli bread with a thick layer of the tomato sauce
  8.  
  9. 5. Add a layer of cheese sauce
  10.  
  11. 6. Sprinkle the caramelised onions on top and garnish with rocket
