Creamy Avocado Zucchini noodles

Making courgette noodles is a fantastic replacement to pasta when your after something a little lighter, and as it’s grain free it makes you feel amazing no matter how many allergies you may have!
It can be eaten raw, as in this recipe, or sautéed until soft. This recipe shows my favourite way to serve courgette noodles, in the most creamy and delicious avocado sauce. I always a liken this recipe to a raw avocado Alfredo, because of the insane creaminess every bite gives you, it’s truly delicious.

Avocados are an amazing addition to any meal and our one of my absolute favourite foods, however i do often get asked if one should avoid them because of their high fat content. Yes, avocados are high in fat, but not the kind you find in a bowl of french fries, or a slice of cheese. Avocado contains a wonderful wealth of the good, mono-unsaturated fats, which are essential for normal bodily function. They make your skin glow, your hair shine, boost your energy and enhance your health ten fold. They also help to boost your metabolism, and actually help the body to burn the bad saturated fats.

Courgettes are bursting with fibre, vital for a healthy digestive system.The soluble fibre contained in the courgettes slows down digestion, and so stabilises blood sugar and insulin levels.

When we blend the avocado with the lemon juice, an amazing cream forms, and whilst it might not look that much in the blender it is the perfect amount for your noodles. Word of warning… This cream is addictive, so don’t eat it all before you use it!!




 
INGREDIENTS
  • 2 courgettes (zuchinnis)
  • 1/4 cup pomegranate seeds
  • 1 avocado
  • Juice of 1 lemon
  • 1 tablespoon olive oil
 
METHOD

1. With a spiraliser, spiral your zucchini into noodles. If you do not have a spiralizer and are desperate to make these, then peal the zuchinni into fettucini.

2. To make the sauce blend all ingredients together until smooth. Mix with the zuchinni and pomegranate. I also love to scatter with some toasted pinenuts!
