Dinner Day 4: Creamy Mushroom & Kale Kelp Noodles

Fresh kale, crunchy kelp noodles, hearty mushrooms and rich coconut aminos to pack a punch of flavour and nutrition.
Ingredients: Cheeze Sauce
  • 1 Cup Cashews (Pre-soaked for 1 hour)
  • ½ Cup Water
  • 1 tbsp Nutritional Yeast
  • Juice from ½ Lemon
  • 1 Peeled Garlic Clove
  • Pinch Himalayan Salt
Method
1. Marinated Mushrooms
  1. - Chop into small pieces, coat with coconut aminos and leave to absorb for 10 minutes

2. Marinated Kale
  1. - De-stem the kale and tear into small pieces. Place in a bowl and massage in the olive oil
  2. - Add the kelp noodles

3. Cheeze Sauce
  1. - Blend the cashews, water, nutritional yeast, lemon juice, garlic and salt to form a creamy sauce
  2. - Pour over the sauce
  3. - Add the mushrooms
  4. - Sprinkle with activated pumpkin seeds and hemp seeds
