When Aduna launched in 2012, 95% of Londoners had never heard of it. Aduna is on a mission to change this. Before working for Aduna, Weniamo was earning &pound;9 a year - only enough to buy a few ingredients and soap &ndash; and struggled to take care of her family of 9. Since selling her fruit to Aduna and working in their processing centre, her yearly income has risen to &pound;131. It stops the water from seeping out the cup but it also makes them non-recyclable. However drinking coffee on the go has become such an important part of our daily lives, how can we keep this habit whilst at the same time reducing the environmental impact?<br /> <br /> <img alt="" src="http://www.planetorganic.com/images/blog/keep_cup1.jpg" /><br /> <br /> <a href="http://www.planetorganic.com/bottles-cups/?pref=ignore&amp;brand=KEEPCUP">KeepCup</a> is the world&rsquo;s first barista standard, reusable coffee cup. Their aim; to promote a worldwide movement of reuse and sustainability.<br /> <br /> Started in 2009 by Abigail &amp; Jamie; a brother and sister team who were running a caf&eacute; in the coffee capital Melbourne. Add the wet mixture to the dry mixture and stir to a thickish batter that easily falls off the spoon. If that&rsquo;s not the case, add another splash of milk and stir again. Let it stand for at least 10 minutes.<br /> <br /> 3. For the carob cream, put all the ingredients into a bowl, stir until well combined and cool in the fridge.<br /> <br /> 4. &nbsp;In a large frying pan, heat up some coconut oil on a medium heat. To make pancakes 10&ndash;12 cm (4&ndash;5 in) in diameter, drop 1 tablespoon of batter for each pancake into the pan and fry for 1&ndash;2 minutes until golden brown and bubbles form. Preheat the oven to 190oC/375oF/gas 5. </span></p> <p><span style="font-size: 11.000000pt; font-family: 'OpenSans'">5. Cook the lentils by adding to a saucepan with 1 cup of water. Bring to the boil and simmer for 15-20 minutes or until cooked. </span></p> <p><span style="font-size: 11.000000pt; font-family: 'OpenSans'">6. Set a frying pan over a medium-high heat and fry the onion in the coconut oil for 5-7 minutes. Add the remaining vegetables and garlic, apart from the aubergine, and continue to fry for 10-15 minutes until the vegetables have softened. </span></p> <p><span style="font-size: 11.000000pt; font-family: 'OpenSans'">7. Stir in the herbs, apple cider vinegar and season well with a pinch of salt and pepper. </span></p> <p><span style="font-size: 11.000000pt; font-family: 'OpenSans'">8. In a food processor, pulse the mixed nuts to small chunks. Add the cooked lentils and the vegetables and blend until everything is combined, but retaining small chunks. Cut the stalks o the aubergines and cut into wide, at 2-3mm thick </span><span style="font-size: 11.000000pt; font-family: 'OpenSans'">slices. Some slices won&rsquo;t come out right, but don&rsquo;t worry, it can take some getting used to! That&rsquo;s why the recipe calls for 2 aubergines, to allow room for error. </span></p> <p><span style="font-size: 11.000000pt; font-family: 'OpenSans'">10. Place on a large baking sheet, rub with coconut oil and cook in the hot oven for 10-15 minutes, turning halfway. </span></p> <p><span style="font-size: 11.000000pt; font-family: 'OpenSans'">11. Lightly grease a 1lb loaf tin with coconut oil and place the aubergine slices around the sides of the tin, keeping them high enough for the opposite aubergine slices to be able to overlap at the top. Pour in the Wellington mixture, using a wooden spoon to pack it in and smooth the top, then lay a single layer of aubergine slices on top. Bake on the middle shelf of the oven for 40 minutes. Remove and allow to cool slightly before removing from the tin. Mix together the flaxseed with 2 tablespoons water and set aside.&nbsp;<br /> <br /> 7.&nbsp;In a large bowl, combine both the flours and the salt.&nbsp;Then add the olive oil and 90ml cold water, plus more if needed, and mix together. Once thickened, add the flaxseed mixture to the bowl and use your hands to fully combine the mixture, until it all comes together.<br /> <br /> 8.&nbsp;Roll the dough out on a lightly floured surface to 5mm thick and 6-7cm wider than the diameter of your pie dish.<br /> <br /> 9.&nbsp;Combine the roasted vegetables with the broccoli and the sauce to make the filling.
