Place the coconut oil in a frying pan over a medium heat, add the onion and red pepper and saut&eacute; until soft. Add the courgettes and olives and cook for a further few minutes.<br /> &nbsp;<br /> Transfer to a large mixing bowl and add the eggs, olive oil, oats, oregano, salt and pepper. Using your hands, mix to combine, then transfer to the prepared tin.<br /> Add the crumbled feta over the top of the mixture and, using your hands&nbsp; or a flat spatula, pat the mixture firmly down into the baking tin. Otherwise you will need to use more oil to make sure the pancakes don&rsquo;t stick.<br /> <br /> 1.&nbsp;You want to extract all the bright purply-pink juice from the beetroot, so grate it into a bowl using the fine side of the grater, making sure to catch the juice.<br /> <br /> 2.&nbsp;Take a second bowl and squeeze the grated beetroot flesh over it so the juice comes out. Wear a glove, as the juice stains and is hard to&nbsp;wash off! Discard the flesh. You can use a strainer to strain the last bit of the flesh and juice from the first bowl into the second so you capture all the juice.<br /> <br /> 3.&nbsp;Put the juice and all the other pancake ingredients (except the oil) into a blender and blend till smooth. Alternately, if you have a stick blender, add all the ingredients to the bowl<br /> of beetroot juice and blend in the bowl.<br /> &nbsp;<br /> 4. To cook your pancakes, heat your pan till it gets nice and hot. Pour in a small amount of oil and spread to cover the base. Wipe off excess oil with kitchen paper, so only a tiny coating remains on the pan. Turn down to a medium heat.<br /> &nbsp;<br /> 5. Pour in some batter, enough to make a small thin pancake. When bubbles start to form in the middle and the edges start to firm up, turn and cook the other side. Put your cooked pancake on a plate and cover with a tea towel to keep it warm. Make the rest of your pancakes the same&nbsp;way, until the batter is used up.<br /> &nbsp;<br /> 6. To make the guacamole, peel the grapefruit using a knife so you leave out the bitter pith &ndash; the thin white layer between the skin and the flesh. Cut the segments out of the membrane and cut each segment into two or three pieces. Chop the avocado into chunks. Put the chopped grapefruit and avocado into a bowl with all the other ingredients except the chilli flakes, and mix lightly with a fork. There are all sorts of names for the culture including mushroom, mother, scoby, fungi and many more. The mixture is allowed to ferment at room temperature for 5 to 30 days. It can be consumed plain or with added flavouring such as fruit, juice or spices. Kombucha contains a number of vitamins (particularly B vitamins) and has a number of health benefits. It contains pro-biotics and as it is fermented lots of lactic acid bacteria.<br /> <br /> Water kefir is a probiotic beverage made with water kefir grains. Water kefir grains can be used with sugar water, or coconut water. Water kefir grains harbour a set of bacteria and yeast existing in a symbiotic relationship (this is the same as the Kombucha so is also scientifically termed a SCOBY, the water kefir scoby and the kombucha scoby however contain different bacteria). The term &quot;kefir grains&quot; describes the look of the culture and they can at times be referred to as seeds. Grease an 8&rsquo;&rsquo; tin with coconut oil.<br /> 2. Pulse the pecans in a food processor (just until they are broken down into small chunks).<br /> 3. Add in the dates and blend until a sticky dough forms. Press the dough into the base of the tin and set aside in the freezer whilst you make the filling.<br /> 4. Place the cashews in the food processor and blend until broken down.<br /> 5. Add in the creamed coconut, coconut milk, maple syrup, vanilla and salt. Blend until the mixture is smooth and creamy.<br /> 6. Take half the mixture out and pour it onto the base, allow this layer to set for at least an hour and a half in the freezer.<br /> 7. Pour the berries into the remainder of the mix and blend until smooth.<br /> 8. Bring to the boil&nbsp;then reduce the heat and simmer for 25 minutes,&nbsp;or until tender. Drain in a colander and run under&nbsp;cold water to stop the cooking process, then leave&nbsp;to cool. Set aside.<br /> <strong>3. </strong>Put the sweet potatoes into a large bowl, add the&nbsp;olive oil, salt and pepper and toss well until the sweet&nbsp;potatoes are coated.Transfer the sweet potatoes&nbsp;to a roasting tin and roast in the hot oven for&nbsp;15&ndash;20 minutes. Leave to cool.<br /> <strong>4. </strong>To make the dressing, put all the ingredients into&nbsp;a blender and blitz until smooth or whisk by hand.&nbsp;Set aside.<br /> <strong>5. </strong>Put the chopped kale leaves into a large bowl, add&nbsp;1 tablespoon olive oil, and using your hands, massage&nbsp;the oil into the kale.<br /> <strong>6. </strong>Once the sweet potato and lentils have cooled, add&nbsp;them to the kale then add the pomegranate kernels.&nbsp;If using quinoa, add this now. It adds depth of flavour &ndash; and the vibrant yellow-orange colour &ndash; to dishes such as curries. But research shows that it&nbsp;does much more than just make our food taste amazing. In India, turmeric is also known as &lsquo;the Golden Goddess&rsquo; and has been used for over 4,000 years as a medicinal herb to protect the body and increase vitality.<br /> Modern studies have shown that this remarkable spice contains&nbsp;a unique range of beneficial compounds that can enhance our skin: from protecting us against premature aging, to clearing the skin, to supporting skin healing and cell renewal. Antioxidant &ndash; anti-aging</strong></span><br /> One of the primary reasons for skin aging &ndash; including wrinkles &ndash; is free radical damage. This can come from processes inside the body (our cells make free radicals just from producing energy!) and from outside the body, such as from UV damage.<br /> As well as protecting our skin from the outside, we can take steps to reduce this damage by consuming plenty of antioxidants in our food. Studies suggest that natural constituents of turmeric &ndash; especially curcumin &ndash; may possess particularly strong antioxidant activity (1), and may directly reduce skin aging &ndash; including preventing moisture loss and protecting against wrinkles [2].<br /> And it&rsquo;s not only aging skin that could benefit. The antioxidant activity of turmeric may also help those with skin diseases such psoriasis and vitiligo, which can involve free radical damage [3, 4, 5].<br /> <br /> <span class="f-large"><strong>2. Anti-inflammatory</strong></span><br /> In addition to free radical damage, inflammation is also a big factor in many skin problems, from acne to psoriasis, eczema and other skin rashes. It&rsquo;s what causes the unsightly redness and swelling, as well as the soreness and heat. A build-up of toxins in the body is one of the potential reasons for skin problems, including dull-looking or sallow skin, skin reactions such as rashes, and even increased skin aging. In our modern environment we&rsquo;re exposed to many more chemicals and toxins than our bodies are designed to deal with &ndash; in the air, in our food and water, on our furniture and in the products we use on our skin and in our homes.
