Preheat the oven to 200 degrees.<br /> <br /> 2.&nbsp;Put a frying pan to the stove and preheat the spinach at medium-high heat. After approx. 10 minutes, scoop the spinach into a strainer and drain properly.<br /> <br /> 3.&nbsp;Put some olive oil in the preheated frying pan adding the shallot, thyme, garlic and black olives and allow to fry for about 6-8 minutes at low heat.<br /> <br /> 4.&nbsp;Into a bowl goes the eggs with a touch of sea salt. Mix for 4 minutes. Add the sundried tomatoes, the pan&rsquo;s ingredients and the spinach and stir until all is mixed properly.<br /> <br /> 5.&nbsp;Finally, stir the lightly beaten eggs.<br /> <br /> 6.&nbsp;Divide the mixture over the baking tin and slide into the oven for about 20 minutes. In a large bowl, put the coconut flour, eggs, coconut milk, baking powder and the rest of the milk. Preheat a non-stick frying pan (skillet) over a low heat. Add 1 teaspoon of the oil and smear around the pan using some kitchen paper (paper towels). Add 1 tablespoon of the batter (or 2 separate tablespoons if your pan is big enough) to the pan and spread a little with the back of a spoon to about 8cm/3&frac14;in. Cook for 2&ndash;3 minutes on each side; be gentle when flipping them over. These pancakes take a little longer than normal pancakes to cook, so the heat needs to be a touch lower so they don&rsquo;t colour too quickly. Add the rest of the oil after you have cooked half of the pancakes. These pancakes are best served warm, so as you&rsquo;ll be making batches keep them in a warm oven as you go. Line a 36 x 20cm (14 x 8in) square baking tin (pan) with baking paper (parchment paper). Place the coconut oil in a frying pan over a medium heat, add the onion and red pepper and saut&eacute; until soft. Add the courgettes and olives and cook for a further few minutes.<br /> &nbsp;<br /> Transfer to a large mixing bowl and add the eggs, olive oil, oats, oregano, salt and pepper. Using your hands, mix to combine, then transfer to the prepared tin.<br /> Add the crumbled feta over the top of the mixture and, using your hands&nbsp; or a flat spatula, pat the mixture firmly down into the baking tin.
