

This is the classic way to prepare and eat artichokes.
- Trim the tips of the outer leaves with a pair of scissors
- Cut off the top with a knife
- Time the smaller leaves towards the stem
- Cut off the stem about 1cm down from the base
- Rinse the globes under cold running water
- Simmer in a large pan of salted water with a tablespoons of lemon juice or vinegar
- Depending on the size of your artichoke it will take 24-45 minutes to cook. They are done when the outer leaves pull off easily.
- Serve with a dish of hollandaise sauce, lemon butter or mayonnaise
- Pull off the leaves one at a time, dip in the mayonnaise and pull through your teeth to remove the fresh inside
- When all the laves are gone, scrape out the hairy "choke" with a spoon
- What is left is the heart and this is the best bit. Cut in to sections and eat with the rest of the sauce
