Barley miso is the traditional miso of rural Japan, where it is known as mugi miso.
Clearspring Organic Barley Miso is made by craft producers who still use a traditional recipe, and fully age their miso in cedarwood kegs.

Miso is fermented Oriental soya bean pasta with a rich, salty and savoury taste that adds flavour and digestibility to soups, stews and sauces. It is made by mixing cooked soya beans,sea salt, water and koji (cultured grain) then aged for up to two years.
