Kuzu is a pure white Japanese food starch that can thicken savoury or dessert sauces or be used to make special medicinal drinks. It has a reputation as a strengthening food for the digestive system. Kuzu comes in dried lumps, the result of a special 100 day process that washes the starch from the fresh root than carefully settles it before drying. It can be used in cooking like arrowroot.
