An original and sweet tomato salsa, made uniquely from ciliegino cherry tomatoes grown on the coast in the province of Ragusa, Sicily. Sicilian cherry tomatoes are famously the best for flavour and traditionally preserved in beer bottles by the local small-holders. The recipe, simplicity itself, is prepared by the Arestia family business, which has farmed and preserved cherry tomatoes, for over two generations; it includes celery, basil, a little extra virgin olive oil and a pinch of salt. The result is a sweet, instant tomato elixir which makes a perfect Bloody Mary and also works great for gazpacho, sauces and soups.
