Lunch Day 3: Marinated Kale & Avocado Salad

Kale is King! Packed with essential minerals, per calorie, kale has more calcium than milk and more iron than beef.
Ingredients
  • 1 Cup Kale (de-stemmed, torn into small pieces)
  • 1 Cup Watercress Destalked
  • 3 tbsp Coconut Aminos
  • ½ Avocado
  • Handful of Activated Spriulina Sunseeds
Dressing
  • 1 tbsp Tahini
  • 3 tbsp Olive Oil
Method
  1.  
  1. 1. Massage the kale leaves in the coconut aminos then place into a bowl with the watercress
  2.  
  3. 2. Top with chopped avocado
  4.  
Dressing
  1. 3. Mix well the tahini and olive oil. Drizzle over the salad
  2.  
  3. 4. Sprinkle the activated sunseeds on top
