Pumpkin & Potato Soup

Serves 2.

Ingredients

  • 1 pint water
  • 1 tbspn bouillon
  • fresh ginger, the size of the last joint of your thumb, cut into tiny sticks
  • 2 cloves garlic, roughly chopped
  • 1/8 tsp cayenne
  • 2 onion, chopped
  • 2 potatoes, cubed
  • 1 small squash or pumpkin, cubed

Instructions

Heat water in a saucepan. As it comes to the boil, add bouillon, ginger, garlic and cayenne. While that is boiling, chop and add onion, potato and squash/pumpkin. Reduce heat to simmer, cover and cook for 30 minutes. Half puree and serve. You can top with olive oil to serve if you wish.
