Pumpkin & Potato Soup
Serves 2.
Ingredients
- 1 pint water
- 1 tbspn bouillon
- fresh ginger, the size of the last joint of your thumb, cut into tiny sticks
- 2 cloves garlic, roughly chopped
- 1/8 tsp cayenne
- 2 onion, chopped
- 2 potatoes, cubed
- 1 small squash or pumpkin, cubed
Instructions
Heat water in a saucepan. As it comes to the boil, add bouillon, ginger, garlic and cayenne. While that is boiling, chop and add onion, potato and squash/pumpkin. Reduce heat to simmer, cover and cook for 30 minutes. Half puree and serve. You can top with olive oil to serve if you wish.
