Apple Cinnamon Crisp With Oatmeal

Serves 4-6.

Ingredients

  • 6 apples, sliced 1cm (1/2 in) thick
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon

For the topping:

  • 100g (3½ oz) plain flour
  • 60g (2 oz) oatmeal
  • ¼ tsp salt
  • 175g (6oz) light brown sugar
  • 125g (4 oz) butter, chilled and cubed

Instructions

Preheat the oven to 190˚ (375˚), Gas 5.

Place the apples, sugar, lemon and cinnamon in a 10cm x 26cm x 5cm (8in x 10in x 2in) buttered baking dish and toss together gently to combine.

For the topping place the flour, oatmeal, salt, sugar and butter in a food processor: pulse until coarse and crumbly.

Alternatively, mix the flour, oatmeal, salt and sugar in a bowl. Use 2 knives to cut the butter into the flour mixture until coarse and crumbly.

Cover the fruit with the topping and bake until the topping is golden brown and the fruit is tender - 45 minutes. Serve hot.

Health Bite

Oats are an excellent source of iron, magnesium and soluble fibre, and are low in saturated fat and sodium. Eaten regularly oats may also help to lower cholesterol.
