Greek Mushrooms

Serves 4.

Ingredients

  • 2 tbsp olive oil
  • 2 medium onions, finely chopped
  • 2 carrots, diced
  • 2 garlic cloves, crushed
  • Chopped up fresh basil, thyme and/or parsley
  • 2 or 3 bay leaves
  • 4 tbsp white wine
  • salt
  • freshly ground black pepper
  • 450g (16oz) small chestnut mushrooms

Instructions

Heat the oil in a saucepan and add the onion, carrot and garlic. Fry gently until soft but not coloured.

Add the bay leaves, wine and salt and pepper to taste and bring to the boil. Simmer for 1 minute.

Cut any large mushrooms in half, and then add them all to the pan. Cover and cook gently for 4 to 5 minutes, stirring frequently.

Discard the bay leaves and taste for seasoning. Allow to cool, and then chill thoroughly.

Serve in ramekin dishes.
