Chilli Non Carne

Serves 2.

Ingredients

  • 1 large onion, chopped in pinto beans, drained/rinsed/mashed
  • 2 sections garlic, pressed
  • 1 cup frozen veggie mince
  • 1 orange pepper, chopped
  • 1 tsp chilli powder
  • 2 tins chopped tomatoes
  • ½ tsp salt
  • ½ tsp pepper

Instructions

Sauté onion and garlic in olive oil. When softened, add the orange pepper, chopped tomatoes, pinto beans, veggie mince and seasonings. Cook covered for 30 minutes.

Eat straight out of a bowl or with tortilla chips. Top with grated cheddar cheese or make tacos with chopped onion, shredded lettuce and grated cheddar.
