
Coconut Date Muffins

Everyone needs a quick and easy muffin recipe up their sleeves. These are made with wholemeal spelt flour and are naturally sweetened with dates and Natvia stevia.
Makes 12 Muffins
Ingredients:
1. Preheat oven to 190°C and spray a 12 hole muffin tin with oil
2. Soak dates in water and set aside
3. Combine flours, Natvia, cinnamon, salt and bicarbonate in a medium sized bowl, mixing well
4. Blend eggs, yoghurt and oil together and stir through dry ingredients along with dates and soaking water until just combined
5. Spoon mixture evenly into muffin tin, sprinkle with shredded coconut and bake for 20-25 minutes or until an inserted toothpick comes out clean

- 180g wholemeal spelt flour
- 120g coconut flour
- 50g Natvia
- 1 ½ tsp ground cinnamon
- ¼ tsp salt
- 2 tsp bicarbonate soda
- 2 eggs
- 200g low fat Greek yoghurt
- 80ml coconut oil
- 1 tbs shredded coconut
