Elena worked at Borough Market for over 15 years, before starting her own fresh produce shop in Bermondsey. Her Russian heritage meant she was already a fan of delicious fermented foods like sauerkraut and kefir, so when she started using unsold produce to make jars of lacto-fermented food, it’s no surprise her side-project would  quickly become an award winning fermentation company!
