Here&#39;s the inside scoop on fermentation and the evidence behind the proposed health benefits.<br /> &nbsp;<br /> <strong>What is fermentation?</strong><br /> &nbsp;<br /> Fermentation is when bacteria and yeast &#39;pre-digest&#39; food and drink, producing a range of vitamins, beneficial organic acids and other health-promoting compounds. Generally, anything that uses microbes to transform simple ingredients fits the &#39;fermented food&#39; bill. They may have boomed recently, but fermented foods have been around for thousands of years! Some of my favourites include kombucha (fermented tea), kefir (fermented milk, or sugary water if you use water grains), live yogurt and sauerkraut (fermented cabbage).<br /> &nbsp;<br /> <strong>The health benefits: where&rsquo;s the evidence?</strong><br /> &nbsp;<br /> Traditional fermented foods are associated with a whole host of potential benefits, including increasing vitamin concentrations (such as folate and vitamin B12), reducing anti-nutrients, lowering blood pressure, supporting our immunity and having a calming effect. Fermenting may also lower gluten and lactose content in some sourdough bread and dairy, respectively.<br /> &nbsp;<br /> Although I am a big fan of fermented foods and anecdotally, I&rsquo;ve seen first-hand the physical and mental benefits of them, with my science hat on, I must declare the clinical evidence for most types is currently limited. The exception being fermented dairy, where there is decent evidence for the health benefits across heart health, bone health, digestion and weight management. The clinical evidence aside, our ancestors have been having fermented foods for thousands of years and associating them with benefit, not to mention they are so full of flavour. So yes high-quality clinical studies need to be done, but in the meantime I do recommend people include fermented foods into their daily diet.<br /> &nbsp;<br /> They may also contain live microbes, although it&rsquo;s worth noting that&rsquo;s not the case for all fermented foods, as many die off in the processing.<br /> &nbsp;<br /> <strong>Fermenting at home: a beginner&rsquo;s guide</strong><br /> &nbsp;<br /> Despite the rumours, fermenting is surprisingly little effort &ndash; once you&rsquo;ve prepared it, you just leave it and allow the microbes to do all the hard work. You can later return to a dish that&rsquo;s transformed and ready to serve. Some fermented foods (such as kimchi or sauerkraut) do require more love and care, but there are plenty of time-efficient options, including kefir, yoghurt and my sourdough wraps (recipe in my book!).<br /> &nbsp;<br /> Before you begin, I should also make you aware that, as with dietary fibre, going from a little to a lot too quickly could make some people extra gassy (while your inner community of microbes have a feast!) so it&#39;s best to increase gradually. Chat to your GP first if you have a weakened immune system or are pregnant too.<br /> &nbsp;<br /> &nbsp;<br /> <strong>Megan&rsquo;s Favourite Kimchi Recipe, </strong><a href="https://www.amazon.co.uk/Gut-Health-Doctor-easy-digest/dp/0241355087"><strong>Eat Yourself Healthy</strong></a><strong>, published by Penguin Life</strong><br /> &nbsp;<br /> An iconic condiment in Korean culture, this ancient flavour bomb is said to be one of the secrets behind the Koreans&#39; long and healthy lives. Kimchi is known as a &#39;wild ferment&rsquo; as it uses the microbes naturally found on plants and in the air (versus a culture-based ferment like kefir). I love kimchi with eggs (my favourite), salads or feta on crackers &ndash; the options are endless.<br /> &nbsp;<br /> <strong>Equipment:</strong> 500ml glass jar with lid<br /> <strong>Ingredients</strong> (Serves 8, 40g portions)<br /> &nbsp;<br /> <strong>Base:</strong> <ul> <li>200g Chinese cabbage (or cabbage of choice)</li> <li>25g sea salt (don&#39;t worry, you won&#39;t be eating this)</li> </ul> &nbsp;<br /> <strong>Toppers:</strong> <ul> <li>1 carrot (50g), grated</li> <li>1 spring onion, diced</li> <li>50g daikon radish, chopped into matchsticks</li> <li>1 garlic clove, finely sliced</li> <li>1 tsp ginger, grated</li> <li>1 tsp gochugaru powder, OR 1/2 tsp chilli powder and 1/2 tsp paprika</li> <li>1 tbsp tamari (or soy sauce)</li> </ul> &nbsp;<br /> <strong>Method</strong> <ol> <li>Rinse the cabbage leaves under running water (to get rid of any residual soil) before chopping to the desired thickness.</li> <li>Put the cabbage and salt in a bowl. Firmly massage the salt into the cabbage.</li> <li>Pour 500ml of water, filtered or de-chlorinated, over the cabbage and submerge it by sitting a plate on top. Let it soak for 2 hours.</li> <li>Drain the soaked cabbage, and rinse three times to get rid of the excess salt. Squeeze out any excess water in the cabbage and place back in a bowl.</li> <li>Add all the topper ingredients and mix well, before transferring the mixture into a 500ml jar and, using your fist, punching down so there&rsquo;s a layer of juice separating the raw kimchi and the air above.</li> <li>Place your glass weight or mini jar on top of the raw kimchi, making sure to submerge all the vegetables.</li> <li>Screw the lid on and leave at room temperature (ideally, 18&ndash;22&deg;C), out of direct sunlight. Each day, check on your kimchi and release any gas that has built up by untwisting the lid a little to let it out.</li> <li>After 3 days (more in colder climates, less in warmer climates) your kimchi is ready for its first taste. If you&rsquo;re missing that acidic bite, leave for an extra day or two.</li> <li>Once it&rsquo;s reached your preferred flavour, pop it in the fridge with the lid sealed tight to trap in the gas, creating the fizziness of traditional kimchi. You may recognise Patka and Martin from the several London farmers&rsquo; markets they sell their unpackaged krauts at weekly. In 2017, PAMA moved their ferment operation from east London to the serene Sheepdrove Organic Farm in Lambourn, West Berkshire, where they continue to hand make their krauts and ferments surrounded by nature and healthy air.<br /> Here&rsquo;s their recipe for a traditional sauerkraut but feel free to experiment by adding in your own fresh spices and herbs.<br /> &nbsp;<br /> You will need: <ul> <li>1 medium head of white cabbage</li> <li>2 carrots</li> <li>5g caraway seeds</li> <li>15g of Himalayan or sea salt</li> <li>1 litre jar, sterilised with boiling hot water</li> <li>A weight that fits inside your jar</li> </ul> &nbsp;<br /> 1. Finely shred the cabbage and grate the carrots into a mixing bowl.<br /> 2. Using your hands, mix the vegetables together with the salt and caraway seeds. It&rsquo;s important to use sea salt or Himalayan salt for ferments as some highly processed salts can stall the fermentation process.<br /> 3. Continue to mix through until the salt is evenly distributed and the vegetables have released a lot of liquid.<br /> 4. Take your clean jar and add in the kraut mix, packing the mixture in and pouring over all the juices from the bowl. The cabbage must be kept under the surface of the liquid, so make sure there are no bits of cabbage clinging to the sides of the jar, then place your weight on top of the mixture to push everything below the surface. You can buy fermenting weights or you can improvise with a ramekin, a small dish or even a stone &ndash; it just has to be squeaky clean.<br /> 5. Close the jar and leave it to ferment at room temperature for two to four weeks, ensuring the sauerkraut is always covered with brine in the jar. You will need to undo the lid to let the air out occasionally. &nbsp;<br /> 7. After two weeks, if the kraut is as sour and tangy as you like it, it&rsquo;s ready to eat. The bag has been certified by the TUV as OK Home Compostable and even though we hope they don&rsquo;t end up here, they are certified as marine compostable too. When these bags break down, they will leave no toxic residue, unlike biodegradable or plastic packaging.<br /> &nbsp;<br /> How do I dispose of it?<br /> If your local council collects food waste separately, pop it in there, or chuck it onto your garden compost heap, if you have one. When disposing with food waste to the council, we&rsquo;d recommend snipping it up into smaller pieces to avoid it being removed.<br /> &nbsp;<br /> We know these options aren&rsquo;t available for everyone, so if you dispose of these bags with your other waste, it will break down in landfill too and not leave any toxic residue. The bags will compost within one to two years, depending on the conditions. &nbsp;<br /> &nbsp;<br /> Composability is a characteristic of a product or packaging that allows it to biodegrade under specific conditions. Composting can reduce the volume of organic waste quite significantly, while the compost produced can be used for agricultural and horticultural purposes. About 50% of all domestic waste comprises organic material, a percentage that is set to grow in the future due to the growing popularity of biodegradable products like packaging, disposable cutlery and plates etc.<br /> &nbsp;<br /> So, what&rsquo;s the difference between industrially compostable, home compostable and biodegradable?<br /> &nbsp;<br /> <strong>Biodegradable</strong> means it will eventually break down. It is not going to stay at landfill for decades or hundreds of years.<br /> &nbsp;<br /> <strong>Compostable</strong>, on the other hand, means it is not only going to break down, but it is also not going to leave any toxic residues during the process of breaking down. There are different levels of composability which depend on time, temperature and oxygen levels.<br /> &nbsp;<br /> <strong>Industrially compostable</strong> means that packaging can only be broken down in an industrial composting plant. It requires very high temperatures and very low oxygen levels during this process. It can be broken down in around 180 days under the right conditions.<br /> Unfortunately, there are not a lot of Industrial Composting Sites available in the UK. This recipe offers a little seasonal inspiration for topping L&amp;F&#39;s cauli pizza bases at home.&nbsp;<br /> <br /> Ingredients: <ul> <li>2-3 white baby potatoes</li> <li>4 asparagus</li> <li>Handful of almond flakes</li> <li>Mint leaves</li> <li>1/2 lemon</li> </ul> <br /> For the pesto: <ul> <li>60g spinach</li> <li>60g basil</li> <li>120g almonds</li> <li>120ml olive oil</li> <li>Juice and zest of 1 lemon</li> <li>1 garlic clove</li> <li>1/2 teaspoon salt</li> </ul> &nbsp;<br /> &nbsp;<br /> 1. Heat the oven to 180&deg;C and line an oven tray with baking paper.&nbsp;<br /> 2. Place the potatoes in a pan and cover with cold water. Add half a teaspoon of salt and bring to a boil. Leave for 5 minutes then drain and rinse under cold water. This step allows the potatoes to cook evenly and ensures you get the best potato slices possible.<br /> 3. To make the pesto, put all ingredients into a blender, blitz and set aside. Check for seasoning and adjust if necessary.<br /> 4. Once the potatoes are cooled enough to touch, take a mandolin or sharp knife and slice the potatoes thinly length ways. Lightly and evenly brush both sides with a little olive oil, season well and lay out on the baking tray. Roast in the oven for 15-20 minutes until a few charring marks start to appear and the edges are slightly crisp.&nbsp;<br /> 5. While the potatoes are in the oven, prepare the asparagus by snapping off the woody ends and massage with a little olive oil. If they&#39;re thick spears, we recommend slicing down the middle before cooking to give a more manageable bite.<br /> 6. Lay the asparagus in a hot griddle pan going against the ridges, season with salt and pepper and leave for a few minutes. Turn them over and repeat until beautifully charred on both sides. You want there to still be a nice bite to them.<br /> 7. These carlin pea, carrot and flaked quinoa falafels are delicious for dinner and make amazing lunchbox fillers, for all the meal-preppers out there.<br /> <br /> <strong>Ingredients:</strong><br /> 2 carrots, roughly chopped<br /> 3 spring onions, roughly chopped<br /> Handful of fresh coriander<br /> 120g dry Carlin Peas, soaked overnight in cold water<br /> 1 cup quinoa flakes or rolled oats<br /> 1 tsp cumin seeds<br /> 1/2 tsp ground turmeric<br /> 1 tsp garam masala<br /> 1 tsp chilli flakes<br /> 1/2 tsp sea salt, to taste&nbsp;<br /> Freshly milled black pepper, to taste<br /> 4 tbsp rapeseed oil or other oil for frying<br /> <br /> <strong>Method:</strong><br /> 1. Add the oat flour, salt and peanuts and mix until the peanuts have broken down into small pieces and the mixture has formed a dough.<br /> <br /> 3. Place the dough in a lined tin (20cm x 10cm) and press it down until a smooth layer covers the base of the tin. Then, put the tin in the freezer while you make the nice-cream.<br /> <br /> 4. For the nice-cream: take out the banana from the freezer and leave it to defrost for 5 minutes.<br /> <br /> 5. Put the banana in the blender together with the peanut butter and blend until you have a smooth nice-cream (scrape down the sides if necessary while making it).<br /> <br /> 6. Get the tin from the freezer and pour your nice-cream on top.<br /> <br /> 7. Chop up the Nugglets and sprinkle them on top of the nice-cream until it&rsquo;s completely covered. This is not some faddy new concept either, but rather, as is usually the case with health, an old concept based on traditional medicines with Ayurveda, Chinese Medicine, South American and Russian roots. Whereas the Western world&rsquo;s approach to medicine is centred on curing disease, the ancient medicine from the aforementioned cultures focuses far more on identifying your personal constituency and using herbs and food to increase longevity, boost health and enhance your mood, to prevent diseases and support overall wellbeing.<br /> &nbsp;<br /> Ashwagandha root (also known as Indian Ginseng) is one of these ancient roots that is categorised as an adaptogen. I&rsquo;ll take any opportunity to cram more greens into my day, and this frittata is loaded with spring onions, spinach, kale and broccoli &mdash; all rich in micronutrients and compounds important for cleansing the gut, and giving a bile-moving blessing to your liver.<br /> <br /> <span style="font-family: Arial, sans-serif; font-size: 13px; font-style: normal; font-variant: normal; line-height: 20.799999237060547px;">SERVES 4&ndash;6&nbsp;</span><br /> &nbsp;<br /> 1 head of broccoli, chopped into florets<br /> 2 tablespoons extra virgin olive oil, plus extra to serve<br /> 3 spring onions (scallions), chopped<br /> 45 g (1&frac12; oz/1 cup) baby English spinach leaves<br /> 3 kale leaves, centre spines and stems removed, then chopped<br /> &frac12; teaspoon ground cumin<br /> 1 teaspoon grated lemon zest<br /> 1 teaspoon lemon juice<br /> 12 free-range eggs, whisked<br /> 2 tablespoons nutritional yeast flakes<br /> &nbsp;<br /> Preheat the oven to 190&deg;C (375&deg;F).<br /> &nbsp;<br /> Bring a saucepan of water to the boil. Add the broccoli and blanch for 3&ndash;5 minutes, or until tender&ndash;crisp. Drain and set aside.<br /> &nbsp;<br /> Heat the olive oil in an ovenproof frying pan over medium heat, then cook the spring onion for a few minutes, until softened.<br /> &nbsp;<br /> Add the broccoli, spinach and kale and saut&eacute; for about 3 minutes, or until softened. Stir in the cumin, lemon zest and lemon juice.<br /> &nbsp;<br /> Pour the eggs over, sprinkle with the nutritional yeast and transfer the pan to the oven. Bake for 30 minutes, or until the eggs are set and golden.<br /> &nbsp;<br /> Carefully remove the pan from the oven &mdash; the handle will be hot! The recipe is super easy to make and the perfect treat to share with your friends and family. The texture of these gluten-free waffles is great because of the chewiness that you get from the ground almonds and the arrowroot really helps holding everything together. We know it&rsquo;s all about the toppings so go all out with &nbsp;dairy free ice-cream, jam, sauces and other treats!<br /> &nbsp;<br /> This recipe makes one big Belgian waffle.<br /> &nbsp;<br /> <strong><em><u>Ingredients</u></em></strong>:<br /> 1 cup <a href="http://http://www.planetorganic.com/rebel-kitchen-whole-coconut-mylk-1l/27600/">Rebel Kitchen Whole Dairy Free Mylk</a> (245g)<br /> 1 &frac12; tbsp coconut oil (23g)<br /> 1 tsp apple cider vinegar (3g)<br /> &frac12; cup oat flour (65g)<br /> 1 cup ground almonds (100g)<br /> 1 cup buckwheat flour (140g)<br /> A pinch of salt<br /> 1 tsp arrowroot powder (5g)<br /> &frac14; cup coconut sugar (40g)<br /> 1 tsp cinnamon powder (2g)<br /> &nbsp;<br /> <strong><em><u>Method</u></em></strong>:<br /> Put the coconut oil and coconut milk in a pan and melt it on a low heat. Once it&rsquo;s melted take it off the heat and add the apple cider vinegar, mix and leave to the side.<br /> &nbsp;<br /> Mix the oat flour, ground almonds, buckwheat flour, salt, arrowroot powder, coconut sugar and cinnamon powder in a bowl. Add the wet ingredients and combine everything.<br /> &nbsp;<br /> Heat up your waffle iron and add the mix. Check it every now and then and once it&rsquo;s coloured and crispy it&rsquo;s ready.<br /> &nbsp;<br /> Top it with your favourite toppings!
