This organic Japanese styled miso has been traditionally aged (fermented) in wooden vats fermented for at least a year, and includes 5 varieties of seaweeds, (Nori, Dulse, Kombu, Ulvaceae, Fucales), 3 varieties of organic mushrooms (shitake, reishi and maitake), that lend an oriental taste and flavour of the sea. Japanese style miso has functional qualities superior to any other miso. This miso has been produced according to an ancient traditional process using the highest quality organic certified ingredients. Some of the key steps in producing miso, sometimes forgotten or set aside by modern producers, are major components in our production process for providing top quality misos unique in the texture and rich taste they develop over time. Rich in the beneficial enzymes and lactobacillus that is produced during the fermentation process, packed in amber dark glass jars to protect these precious properties from light degradation, we offer genuine miso of the highest quality.
