Summer has truly sprung and I'm switching my bowl of porridge for a fresh and creamy smoothie bowl!
This coconut, strawberry and vanilla smoothie bowl is one of my absolute favourite breakfasts at the moment, it's wonderfully balanced with the addition of cashews, and a wonderful source of sustained energy from the sprouted oats. It's the perfect breakfast to give you an abundance of goodness, without weighing you down. This is something I also love for an 'on-the-go' style breakfast, poured into a jar and sprinkled with a little coconut. It's really easy to tote around with you, and eat on your commute into work, or when you reach your desk!
Add all ingredients into your blender and blend! Pour into a bowl (or jar) and sprinkle with your favourite toppings.
