Raw Activated Nut Roast

A revitalised and activated alternative to the well known vegetarian Christmas option - this is a raw vegan version made with activated nuts, grains and seeds.
Raw and paleo, suitable for vegetarians and vegans.

Ingredients
  • 1tsp chia seeds/ linseed (preferably ground in a spice grinder/blender/pestle and mortar)
  • 3 spring onions, finely chopped
  • 3 pinches of finely ground white pepper
  • 15g parsley leaves
 
Method
Note: a food processor is a useful tool in raw recipes however this can made by finely chopping ingredients instead
 
  1. - Food process the nuts and pepitas or finely chop until the consistency of bread crumbs and place in a large mixing bowl
  2.  
  1. - Food process or grate the carrots and add to bowl
  2.  
  1. - Individually food process or chop as finely as possible the kale, red pepper, fresh herbs and dates and add to the main bowl
  2.  
  1. - Add the rest of the ingredients to the main bowl and knead with your hands until it sticks and forms together
  2.  
  1. - Empty on to a plate and mould into a loaf shape
  2.  
  1. - Decorate with fresh parsley leaves either garnished around the side or gently pressed flat into the surface
  2.  
  1. - Refrigerate for 1 hour
 
Serving
Let the nut "raw"st arrive to room temperature before serving and cut slices gently with a serrated knife. Should perfectly compliment your Christmas menu and would also be nice served with cranberry sauce or chutney.
