In the summer, the Keto cook has an easy time because warm evenings are perfect for the BBQ and fire and coals work well with Keto. From delicious pieces of lamb, marinated with lemon garlic and rosemary to halloumi slices dipped in oregano oil the BBQ is easy and fast. Combining the protein of your choice with a selection of vegetables grilled on the cooler racks is the perfect accompaniment to a green crispy salad. So here is a quick easy BBQ recipe for every Keto diet.
For 4 Keto enthusiasts (a meat eater; A fish eater; a Vegetarian and a Vegan)
- 1 organic lamb chop
- 1 organic salmon streak/fillet
- 1 cauliflower
- 1 block of halloumi
- 8 cloves of garlic
- 3 lemons
- A bunch of rosemary
- A bunch of oregano
- A bunch of coriander
- A thumb sized piece of ginger
- A teaspoon of chill flakes or one fresh red chili
- A teaspoon of cumin
- 4 bags of asparagus
- 4 red sweet peppers
- One large lettuce
- 1 large avocado
- Two spring onions
- Olive Oil
- French white wine vinegar
Meat option - Mix up 2 cloves of garlic finely chopped or minced with two large tablespoons of olive oil and the juice of one lemon with half the rosemary chopped with a large pinch of salt – add the lamb chop and leave to one side
Vegetarian option - Mix up half the oregano, chopped, with a couple of tablespoons of oil and salt and add the sliced halloumi
Fish option - Mix up the ginger grated with two cloves of garlic grated and a pinch of chili flakes with salt and rub in onto the salmon
Vegan option - Mix up the coriander, finely chopped with a teaspoon of cumin and rub on a large cauliflower steak
Now heat up your BBQ and while you wait for it to fire up mix up the lettace with the avocado and spring onion and add the home made dressing below
9 tablespoons of light olive oil
1 tablespoon of vinegar
4 cloves of garlic crushed or finely chopped
Masses of salt / pepper to taste
When the BBQ is ready, hand out the drinks and put the lamb on first with the salmon wrapped in foil. After 5 minutes add the halloumi slices and the cauliflower slices.
Vegetables great for grilling on the BBQ are courgettes, aubergines, green peppers & mushrooms. Simply chop them up and pop them on a skewer and leave to cook.
Serve with a fresh green salad of mixed leaves, cucumber, radish, avocado, spring onion and green pepper. Drizzle with olive oil and a squeeze of fresh lemon juice to dress.
