
Salted Peanut and Chocolate Cookies by Livia's Kitchen

These gluten free salted peanut chocolate chip cookies are the perfect afternoon treat. They are so easy to make and perfect for making with the little ones to keep them busy. Who would have thought that just 6 ingredients could come together to make such a dreamy cookie? In this recipe we use a combination of naturally gluten free buckwheat flour and ground almonds to achieve the perfect soft texture. The saltiness from the peanuts balances perfectly with the sweet dark chocolate making them so delicious. We really struggled to have just the one each when we first made them in the Livia's Kitchen office!

Ingredients

2 cups Ground Almond -250g

½ cup Buckwheat flour -75g

½ Tbsp coconut oil – 10g

¼ cup peanut butter – 55g

¼ cup Maple syrup – 70g

½ cup Raw chocolate – 105g
Method:
Preheat the oven to 180 degrees Celsius and line a tray with baking paper.
Add all of the ingredients (excluding the chocolate) into a bowl and stir until fully combined. Chop the chocolate into small squares and then add this. Fold this mixture well to ensure that the chocolate is evenly dispersed.
Taking a tablespoon at a time, roll the mixture into a ball and then gently flatten onto the baking tray.
Place the tray into the oven and bake for 20 minutes or until golden.
We love our cookies straight out of the oven with warm vanilla almond milk - yum!
