When making the dough, the amount of water and temperature is adjusted for each batch by an expert to ensure quality and consistency, which cannot be achieved by machines alone. Once the dough is just right, it is made into noodle strands, which are traditionally and carefully slow tried, giving the noodles the perfect bounce or ‘koshi’. Serve all year round in hot broths, stir-fries or chilled with a dipping sauce."
