This vegan poke bowl uses plant-based protein, tempeh marinated in teriyaki for flavour and served with any vegetables you might have in the fridge. All you’ll need is 1 pack of tempeh cut into bite-sized chunks, brown rice, 5 tbsp of teriyaki sauce, 1 tin of Biona edamame beans, slaw, avocado and any vegetables of your choice such as cucumber or spring onions.
Simply marinate your tempeh in the teriyaki for 15 minutes in the fridge and while it’s marinating, cook your rice to packet instructions. Fry the tempeh for 5 minutes in a frying pan with hot oil, prepare your vegetables and divide the rice among serving bowls. Finish your vegan poke bowl with the teriyaki mixture, edamame beans, slaw and serve with a wedge of lime.
