Teriyaki Tempeh Poke Bowl Recipe

Looking for an easy vegan lunch recipe with tempeh? This vegan poke bowl uses plant-based protein, tempeh marinated in teriyaki for flavour and served with any vegetables you might have in the fridge. All you’ll need is 1 pack of tempeh cut into bite-sized chunks, brown rice, 5 tbsp of teriyaki sauce, 1 tin of Biona edamame beans, slaw, avocado and any vegetables of your choice such as cucumber or spring onions.

 

Simply marinate your tempeh in the teriyaki for 15 minutes in the fridge and while it’s marinating, cook your rice to packet instructions. Fry the tempeh for 5 minutes in a frying pan with hot oil, prepare your vegetables and divide the rice among serving bowls. Finish your vegan poke bowl with the teriyaki mixture, edamame beans, slaw and serve with a wedge of lime.

Tofu Ramen

Wondering how to use tofu in ramen? With this vegan tofu ramen recipe, you can make a tasty and nutritious dish with the ingredients you have to hand. To make the flavoursome light broth you will need to caramelise thinly sliced onions in oil, adding in crushed garlic, veggie stock, dried shiitake and seaweed. Over a medium heat, continue to add the miso paste, soy, and pepper to taste simmering the broth for around 25 minutes. Complete the dish by adding the broth to cooked noodles, preferred toppings, and finish with the cubed tofu. Simple and tasty.

We have veganised the classic Caesar salad with tempeh as the meat substitute, vegan parmesan, and a cashew dressing. To make the vegan parmesan mix roasted sunflower seeds, 1 tbsp canola oil, 1.5 tbsp nutritional yeast flakes and a pinch of sea salt in a food processor. Make the vegan Caesar salad by shredding your lettuce and kale, dice your bread and fry in a pan until crispy along with the tempeh. Tofu Scramble

Are you craving scrambled eggs? Look no further. Our vegan tofu scramble recipe begins by drying the tofu, draining it for 15 minutes, and using a fork to crumble it into bite-sized pieces. To make your sauce combine salt, garlic, cumin, and chilli powder with water to thin. Sauté your vegetables of choice before adding the tofu and sauce to one side of the pan. Cook for another 5 to 7 minutes until the tofu scramble is browned and serve on toast.
