"Clearspring 100% Buckwheat Soba Noodles, also known as ‘juwari soba’, are traditional Japanese noodles made with only buckwheat flour. They are gluten free and deliver a delicate nutty flavour with a very distinctive texture.Made by a third-generation artisanal family producer, who has been dedicated to creating traditionally made, premium quality noodles since 1973. As buckwheat does not contain any gluten or binding agents, it requires great skill and time to produce these popular noodles, a skill Clearspring producer has developed over the decades in Japan’s Nagano prefecture, a region celebrated for creating the very best 100% buckwheat flour noodles. The buckwheat is carefully milled to create a fine buckwheat flour, which is then made into a dough using specialist equipment and importantly, the expert knowledge and craftsmanship of the producer to get the consistency just right. Once formed into noodle strands, they are traditionally air-dried, sometimes for up to a week. The drying process is one of the secrets to the great taste and texture of these noodles, which have an added springiness (known as “koshi” in Japan).They perfectly absorb the flavour of the seasonings, broths or dressings in which they are cooked or served and can be ready in just five minutes. You can enjoy them hot or chilled in dashi, with a dipping sauce or in a wide variety of stir-fry and salad recipes. "
