So without further a due, I’ll get to what you’ve been waiting for, this weeks recipe for creamy summer berry mousses...
Summer is here and there is an incredible abundance of fresh berries in the supermarket. These berry mousses are perfect for using seasonal foods to create a fresh dessert that’s simply out of this world delicious...as it is nutritious, of course! These berry mousses are completely dairy, gluten and refined sugar free leaving you feeling light and refreshed rather than heavy and bloated. The benefits are endless from a burst of powerful antioxidants to gorgeous glowing skin from the coconut and good quality plant-based protein from the cashews. It’s a real crowd pleaser and I find that all ages seem to absolutely love this; making it the perfect dessert for the more conventional eater too!
Recipe serves 4-6
1x400ml tin of coconut milk
80g (1/2 cup) cashews, soaked for two hours prior
150g (1 cup) raspberries
300g (2 cups) strawberries
250-500ml (1-2 cups) of Oat/rice milk
Add all ingredients to a blender and blend. Starting with 250ml (1 cup) of dairy free milk and working your way up to 500ml (500ml) if needed by your blender. Pour into jars/ glasses/bowls and garnish with some slices strawberries. Keep refrigerated for a few hours to set, before serving!
